I like my own sauce. I can change up the seasonings and flavors. I also have a problem with the cornmeal smoking in the oven. And with an overly sensitive smoke detector, Pizza nights can be interesting.
I went back to flour as the peel lubricator and all is well now. I found that without peels, parchment paper can act as a good substitution and will take the heat of the oven.
Dough? I use a variation of Wolfgang Pucks and one I leaned at Culinary School. No in the fridge overnight, and I add honey to the recipe. Works well.
Pizza is so subjective though. Some like everything on it, and I like most, but just don't understand pizzas with fruit ( only my opinion)

My family loves pizza so after watching a grilling show on the food channel where the host grilled a pizza I was determined to perfect homemade pizza!! I started by making a simple pizza dough in the breadmaker which to some people is cheating, I know, but soon my breadmaker broke so I was on my own. I've tried several recipies, some take a lot of work, others not so much work and each turn out differently. I have found one that turns out great each time.
I took the whole homemade pizza thing to a whole new level and perfected my own sauce which I now make in a huge batch and can in small jars which are just right for pizza night. I also have a great herbed olive oil sauce we use as well. I've not yet mastered any kind of white garlic sauce.
During the nicer weather, especially summer when it's too hot to use the indoor oven, we grill our pizzas outside. We've even taken the ingredients camping and grilled pizza on the open campfire - how many people can say that?
A trick for the smoking cornmeal...if you're using a pizza pan, a dab of olive oil added to the pan should help.

I love making pizza and enjoyed hearing your story. It’s reassuring to know that I’m not the only one to have kitchen failures. I also use an air cookie sheet instead of a peel… who needs to store another piece of kitchen equipment. Since you like your tomatoes with skins on them, I thought you might like to try my method. I like to just use fresh tomatoes out of the garden, or canned tomatoes with no sauce. I just put olive oil, salt, pepper and basil on the crust with the cut up tomatoes, then top as usual.
