I have not tried this but I have seen it. A similar item that I did make last summer and will be making again soon is the Stuffed BBQ Fattie from instructables – http://www.instructables.com/id/How-to-make-a-stuffed-BBQ-Fattie/
After cooking you chop it up and use it as a dip. The flavors were incredible.
I’ve been thinking about making this after watching Eric make it. Tomorrow {Aug. 4th) is supposed to be 80 with low humidity here in Wisconsin. Why not fire-up the smoker and give “The Barbecue Explosion” a try?

I was having issues with the bacon weave so I brought the foil lined pan with the bacon in the living room and started playing the video. I stopped at each step of Eric doing the weave and finally got it figured out.
I’ve never sat in front of the computer assembling a food item before. Of course something with two lbs. of bacon and two lbs. of italian sausage isn’t quite normal either. 🙂
