    Cheater Apple Pie Recipe, aka The Apple Galette – GF Video

    Simple apple pie recipe hack, this apple galette is much easier to make than a proper apple pie, and tastes and looks just as good. Call it Rustic Apple Pie. Watch the video and check out the recipe below.

    I call this a cheater apple pie, because its similar to an apple pie recipe, but is less fussy. Roll out dough, drop in fruit, bake, done. Apple pie seems more involved, but we’ll make those too. Now I have ideas for pie in my head. Do you? Let me know below.

    Cheater apple pie recipeThis galette is a low sugar version, a sprinkle of sugar is all I added, and it was fine. I used dried cranberries and learned that its best to have the cranberries tucked under the apples on top of the galette, else they get too crunchy from the oven heat. You could use other dried fruits, but I think we need to eat more cranberries.

    Don’t sweat the pie crust! It’s not rocket science to make a decent crust. Be sure to put the pie dough in the fridge for a while to let it set up. A key ingredient in my pie crust is sugar. It adds a bit of sweetness and crunch to the crust, this same crust would make good rugelach, you know. Have to work on that one. My grandmother made those every Christmas.

    The apples in this galette get soft, but don’t break down and go mushy, its baked apple slices and cranberries, and goes well with a bit of vanilla ice cream. Some liquid may leak out the side, but that’s ok. Best to bake this on a lined cookie sheet or a greased cast iron flat skillet just in case.

    I used Fuji apples for this, and use my fav apple corer, it makes the prep go fast, I think.

    A simpler version of apple pie, the apple galette is a open faced rustic crust pastry that you can add all sorts of fruits to. Today we use apples and cranberries
    Ingredients
    • 3-5 apples cored and sliced – if the apples are small use more apples.
    • 1 cup of dried cranberries
    • 1-2 tablespoons sugar
    • 1 tablespoon lemon juice
    • lemon zest
    • 1 1/2 tablespoons cornstarch
    • 1 stick of unsalted butter – cold
    • 1 1/4 cups all purpose flour
    • 1 tablespoon sugar
    • 1/2 tsp salt
    • ice water
    Instructions
    1. If possible, make the pie crust a few hours beforehand, or the day before:
    2. Cut the stick of cold butter into 1/2″ cubes, and place in food processor.
    3. Add the flour and sugar and salt.
    4. Pulse the processor until the flour and butter have cut together. it looks kinda like lumpy cornmeal. if you’re not sure, make sure all the butter cubes have been mixed into the flour.
    5. Put this dough in to a bowl, and add ice cold water a few tablespoons at a time. mix the water into the dough until the dough can form a ball. Don’t add too much water and make the dough sticky. If you do, add some more flour to the dough.
    6. Place this dough onto some plastic wrap, shape it into a large hockey puck, and put in the freezer for 10 minutes, or the fridge for 30 minutes. The longer it is in the fridge , the better the dough gets, I think.
    7. Combine in a bowl the apple slices, lemon, sugar, zest, cornstarch, and cranberries. Mix together.
    8. Roll out the dough on a floured board, you want it about 14″ in diameter, about 1/4-1/8″ thick.
    9. Place the pie dough onto a greased cast iron pan or cookie sheet.
    10. Pour the apples into the center of the crust and pull up the sides onto the pile, pinching the dough together to hold it up. Slip any exposed cranberries underneath some apples.
    11. Bake at 400 for about 35-40 minutes. The apples will not break down, but will be soft.

    Our rugelach recipe is based on the on my Grandmother and Mom for the Christmas holiday. We also called Rugelach ‘roll-ups’ not sure why, maybe it was easier to say. But, Rugelachs are easy to make, and with Eric’s recipe for rugelach, you can too. Our family’s version of rugelach used the classic nut – sugar mix, but we also used jam or jelly. Its important not to use too much jam or jelly; when you bake the rugelach, some of the jam may seep out and burn you cookie sheet. Not a good thing.

    rugelach recipeThere are some people that say rugelach and croissants are related but after reading this Wikipedia entry, I don’t think so. Rugelach is a much older treat and croissants only came about in the 19 century. Nonetheless rugelach are found in a lot of different cultures and in a lot of different countries, especially in Eastern Europe. Take some flour, a little sugar, add some nuts and something sweet, roll it up and bake it and you got this excellent dessert.

    Here’s my modern take on rugelach I add cream cheese to the pie dough and it works out really well. The dough might be a little wet, so use a little less water. You can always add a little more as you go along. If you find the dough is too wet after comes out of the fridge, you can add a little bit of flour to soak up the moisture.

    Eric’s Rugelach Recipe

    2 cups all purpose flour

    2 sticks butter – cold – cut into 1/2 cubes

    3 teaspoons sugar

    8 ounces cream cheese – cut into 1 inch blocks

    1 teaspoon salt

    2 cups chopped walnuts

    1/2 cup brown sugar

    1 teaspoon cinnamon

    lemon zest – optional

    Preheat oven to 350F

    In a food processor, pulse the flour and butter together until the flour coats the butter and the mix starts to look like large cornmeal.

    Add in the cream cheese and pulse to mix it all together, it should start to form small marbles, and also just some fine powder as well. ( it never looks like it does on the food TV shows, don’t worry )

    Put the flour mixture into a large bowl, and start to add small amounts of ice water, about 2 tablespoons at a time. Mix the water into the flour until you get a dough that is wet, but dry enough to handle.

    Shape the dough into a big disc, wrap in plastic wrap, and put in the freezer for about 10 minutes, or the fridge for 30 minutes. You can also leave the dough in the fridge until the next day if you want.

    Mix the walnuts with the brown sugar and cinnamon. You can also add lemon zest to the nut mix.

    On a floured counter or plastic wrap, or whatever you like to use for dough, try to shape the dough into a big circle, like a pizza. If it isn’t perfect, don’t worry, use a pastry scraper to cut out a rough circle, save the extra pieces.

    Pour the nut mixture onto the circle of dough

    Cut pizza slices into the dough. the outside of the slice should be 1.5 – 2″ wide.

    Roll up the slices so they look kinda like croissants.

    Place on a greased baking sheet, bake at 350F for about 30 min. The crust should be slightly golden, you can bake them more if you like, just don’t burn them.

Rice pudding is a comfort food, it reminds me of diners and maple syrup. Plus rice pudding is super easy to make, even I can make it .
    Many people make a bouron sauce for rice pudding, but I prefer honey or maple syrup. I’m not big on the bourbon sauce, I find it too sweet and boozey.

    Plus this is another use what you got recipe, in that you can put in nutmeg or cinnamon or a combo of both. At the local diner, they sprinkle the cinnamon over the dish of rice pudding just before baking it rather than mixing it into the batter.

    Other additions that I’ve seen are chopped apple, lemon or orange zest, dates, currants, and other dried fruit. Try some stuff in your cupboard and let us know what works for you in the comments below.

    In testing for doneness, its eye of the beholder, some people like pudding firm, and others like it more loose pudding like. I think a lot of it depends on what you ate as a kid. I remember a lot of Jello pudding as a kid, so i tend toward the firm side of puddings.

    Best Rice Pudding Recipe
    Ingredients
    •    2 cups cooked rice, long, short, or brown
    •    1 1/2 cups milk
    •    4 eggs
    •    1/3 cup sugar
    •    1 tsp vanilla
    •    1 tsp salt
    •    1 tsp cinnamon or nutmeg
    •    1/2 cup walnuts or raisins ( optional)
    Cooking Directions
    1. Preheat Oven to 325F
    2. Mix together everything but the rice.
    3. After the eggs are well mixed, add in the rice.
    4. Pour the batter into a greased 8×8 or 9×9 dish
    5. Bake for 25-30 minutes
    6. Pudding is done when its the consistency that you like pudding, some like it firm, some like it jiggly.
    7. I prefer to serve warm with honey or maple syrup.
